First, With my Mediterranean Chicken Kabobs I chose to lighten up my recipe by replacing the use of full fat buttermilk in my marinade.

I swapped it out with Greek yogurt and Mazola Corn Oil.

Don’t forget to add spices and a little fresh lemon juice to your marinade.

I didn’t just stop there y’all!

Secondly, I made a light and fresh Mediterranean salsa that included tomatoes, olives, cucumbers, red and green onions.

Instead of serving this dish with rice or pasta I opted for fresh salsa coated in a lemon based vinaigrette.

The salsa was tossed in spices and Mazola Corn Oil was used in the vinaigrette.

No need to purchase store-bought salsa when you can make fresh salsa in a matter of minutes.

Lastly, while my Mediterranean Chicken Kabobs were grilling I quickly made a delicious Tzatziki sauce recipe.

Mazola Corn Oil with Greek yogurt replacing mayonnaise were mixed together with feta cheese and chopped cucumbers.

Mediterranean Chicken Kabobs

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Servings: 4

Ingredients:

3 lbs chicken breast, boneless, skinless

1 cup Greek yogurt, plain

1/2 cup Mazola Corn Oil

8 cloves garlic, minced

1 tablespoon creole seasoning

1/2 tablespoon black pepper

1/2 tablespoon garlic powder

1/2 tablespoon onion powder

1/2 tablespoon Oregano, dried, crushed

8 bamboo skewers, soaked in water

parsley to garnish

naan bread to serve

For the Mediterranean Salsa:

1 cup tomatoes, diced

1 cup cucumbers, seeded, diced

1/2 cup red onions, diced

1/2 cup green onions, diced

1/2 cup black olives, sliced

1 tablespoon Mazola Corn Oil

1/2 tablespoon lemon juice

1/2 tablespoon chopped Italian parsley

1/2 teaspoon creole seasoning

1/2 teaspoon black pepper

For the Tzatziki Sauce:

1 cup Greek yogurt, plain

1/2 cup feta cheese, crumbled

1/4 cup Parmesan cheese, grated

1/2 cup cucumber, seeded, diced

1/2 lemon, juiced

1/2 teaspoon black pepper

1/2 teaspoon oregano, dried, crushed

Directions:

Soak bamboo skewers in water at least one hour prior to grilling.

Mix seasoning blend for chicken and set aside.

Rinse chicken, pat dry, cut into 2 inch chunks, place chicken into a bowl.

Place Mazola Corn Oil, Greek yogurt, and spices into the bowl with the chicken.

Mix well and marinate at least two hours or overnight in the refrigerator.

To grill chicken, place around 4 chucks of chicken onto skewers.

Grill chicken for about 7-8 minutes per side until chicken juices run clear and the internal temperature reaches 165 degrees F.

Top with salsa and tzatziki sauce.

Garnish with parsley.

Serve with warm naan bread if desired.

To Prepare the Mediterranean Salsa:

Mix all of the ingredients together and chill until ready to serve.
